Buttermilk or Chaas or chhaachh is made by churning yogurt (curds/dahi) and cold water together in a pot, using a hand-held instrument called whipper (madhani in hindi). Packed with electrolytes and lots of water, buttermilk is the best thing you can give your body to fight dehydration. This drink easier to digest than other dairy products and popular across Indian subcontinent. This type of chaas is very close to lassi, with two major differences: chaas is more dilute (with water) than lassi and unlike lassi, chaas does not have added sugar.
The use of an earthen pot makes the chaas cool even in summer. In the extremely hot desert areas of Gujarat and Rajasthan, people consume chaas with salt. As after getting exposed to the sun because this may aid rehydration. The chaas cools the stomach and reduces the irritation in the stomach lining due to acid reflux, giving you relief from the discomfort.
Buttermilk can be consumed plain, but a little salt is usually added. The spices which can be added thus are: Coarsely ground and roasted cumin seeds, curry leaves, asafoetida (हींग), grated ginger, mint leaves, black pepper and Mustard seeds. Chaas is consumed all year round. It is usually taken immediately after meals, but is also consumed on its own as a beverage. Known for their carminative properties individually together in a tall glass of chaas, they make the best natural digestive drink.
